Paws Up Huckleberry Pancakes Recipe

This elevated take on a classic breakfast food will transport you straight to the mountains of Montana.

Situated on a sprawling, authentic working cattle ranch in western Montana lies The Resort at Paws Up. Referred to as “The Last Best Place,” the resort is known for its breathtaking views, thrilling outdoor activities, and incomparable food and service, including its renowned Huckleberry Pancakes.

A guest favorite, these Huckleberry Pancakes celebrate the locally loved fruit native to Montana and can only be found in a select few states in the country. What makes them so special is the fact that they can only be found in the wild; they have never been cultivated, and the bushes cannot be transplanted.

Huckleberry Pancakes
Makes 20 (4-inch) pancakes

4 cups flour
1/2 cup sugar in the raw (Turbinado)
4 tablespoons baking powder
2 tablespoons baking soda
1 teaspoon salt
4 eggs
3 cups whole milk
3/4 cup vegetable oil
1 tablespoon vanilla paste
1/2 cup butter
2 cups huckleberries
2 cups granola
Butter and huckleberry syrup, for serving

In a large bowl, combine flour, sugar, baking powder, baking soda, salt, eggs, milk, oil and vanilla, mixing well. Heat a skillet or griddle over medium heat. Add 2 tablespoons butter; once slightly melted, add batter to the griddle to make a 4-inch pancake. Add 1 tablespoon of huckleberries and 1 tablespoon of granola to each pancake. Once browned on one side, flip and cook until lightly browned on the other side. Repeat with remaining ingredients. To serve, top with huckleberry syrup.

Tip: if you don’t have access to huckleberries, blueberries can be substituted.

“Lots of new exciting ideas occur to me every day in Montana. It’s such an inspiring place, with culinary riches, wild huckleberries, cherries, wild chamomile — even elk, bison and trout,” Jin continues. “I want to serve something that I would like to eat and, at the same time, be proud of, and of course, our kitchen’s staff and our guests’ opinions matter greatly. The reward for me is when I’m able to engage and connect with local farmers and ranchers. Their commitment to their craft and community is where I gained a sense of obligation. That obligation is then the intentional focal point in every meal.”
